Sunflower Crepes - As seen on PBS TV, Country Inn Cooking

6 eggs
1 C Light Cream
1 Pkg Frozen Chopped Broccoli, cooked
1 C Cheddar Cheese - Orange, shredded
1 tsp White Pepper
3 Tbsp Mayonnaise
Prepare basic crepe recipe. Refrigerate crepes. They are easier to work
with when they are cold. Arrange a crepe in each of the extra large muffin
tins making folds in crepe to fit. Sprinkle a little cheese in bottom of
crepe.
Combine eggs, mayonnaise and cream. Add pepper, broccoli, and cheese.
Pour mixture into crepe filled muffin tins.
Cover crepes with tin foil so the crepe flower will not burn - bake at
350 degrees for 30 minutes...until golden and the eggs are set.
